Edible(sort of) Bouquets

Has your lettuce bolted but it still looks pretty? Is it getting tall and shading your cabbages? Do you feel bad about wasting what was a perfectly delicious food a few weeks ago? Do not despair! Pull it up, cut away the roots, remove the lower leaves, put it in a vase and you've got something pretty.

This principle works with anything that bolts, like say, fennel.

I don't know how long these will last but it's cheaper than buying flowers. I'm going to a barbeque today. Perhaps I'll bring a bouquet. Is that what a patriotic American would do on the 4th of July? I think Thomas Jefferson might approve.
